Taco Tuesday is a thing in our house. Since Tuesdays are a busy night with gymnastics and tumbling, we need something that I can start and my husband can finish as we exchange pick up duties for our girls. Tacos are an easy solution. Everyone in the family likes them, too, which is usually a challenge. So we eat them – a lot.
But I get tired of the same old thing all the time!
I decided to experiment with a change up, and I made this dish. It satisfies my taco-loving kids, and it makes my husband and me happy to have something a little different than our standard.
I started with basic taco meat, but I added diced onion and green chiles to make it yummier. (Don’t tell my picky kids!) Then I rolled up the meat mixture in tortillas and put them in a casserole dish.
While the meat was cooking, I stirred together a creamy cheese sauce. Use whatever cheese you like – pepperjack for a little spice, colby jack for mild, cheddar for a little stronger flavor – and melt it into a butter, flour, milk base. It’s very simple.
Here’s how I made the cheese sauce: I melted the butter in a medium saucepan. Then I whisked in the flour. Trust me – use a whisk. This one is very similar to the one I have, and it’s great for my nonstick pan so I don’t scratch it.
When it was smooth, I slowly whisked in the milk. Then I added the grated cheese and stirred until the cheese was completely melted.
I poured the sauce on top of the tacos in the dish and baked them. They were so good!
Ingredients
- 1 lb ground beef
- 1 pkg taco seasoning
- 1 8oz block Colby jack, shredded (Use pepperjack for more spice)
- 1 4oz can green chiles
- 1 small onion, diced
- 4T butter
- 4T flour
- 2C milk
- 12 taco-sized tortillas
Instructions
- Sauté onion and green chiles until soft. Add ground beef and brown. Drain. Mix in taco seasoning per package directions. Stir in half of shredded cheese until melted.
- Spoon two tablespoons of beef mixture onto a tortilla and roll. Place the tortilla seam-side down in a prepared casserole dish.
- Melt butter in a small pan. Whisk in flour. Slowly whisk in milk and stir until thickened. Add the other half of the shredded cheese into the sauce. Stir until melted.
- Pour the cheese sauce over the rolled tacos. Bake at 375 for 15-20 minutes.
- Top with lettuce, tomato, onion, etc. Serve warm.
