Cheesy, creamy potatoes mixed with diced ham makes a hearty meal for the whole family.

Before you try Cheesy Scalloped Potato & Ham Casserole, here’s a scenario for you:

Easter has come and gone. You made it to church with the entire family, and amazingly you ended up with at least one good family picture. The egg hunt is over, and the Easter Bunny left your kids way too much candy. (Oddly enough – it’s all your favorites. Weird how the Bunny knows these things.) Once again, you made a bit too much for the holiday meal, and now you have leftovers that your family will not be as excited to eat the second time as they were the first.

We’ve all been here, right? This year, I’m going to help you plan ahead so don’t worry. You won’t have to feed your crew the same meal and hear all the groans. So let’s be creative and make something new!

Let’s make Cheesy Scalloped Potato & Ham Casserole

Cheesy Scalloped Potato & Ham Casserole uses your leftover Easter ham (or the regular ham you bought at the store if you just want to make a hearty casserole) and makes something brand new to please your family. And if you have leftover mashed potatoes, skip the “scalloped” part of this. Use the mashed potatoes to layer with the creamy, cheesy ham mixture. (I haven’t done this yet, but let me know in the comments if you try it.)

For this casserole, the most work will come in dicing the ham and slicing potatoes. And really, if you have a mandolin, the potatoes part is easy, too. 

The rest is simple. Saute some onions and garlic, add your thickener (butter and flour), add the cream, and add the cheese. Stir in the ham. 

Then, grab your casserole dish. Layer the creamy, cheesy ham mixture with your sliced potatoes. Top the whole thing with shredded cheese. Bake. 

Oh, the waiting may be the hardest part…

Warning: Let it cool before tasting it. I didn’t and burned my mouth. I do that a lot. Some day I will learn. Maybe? Probably not.

Alright. If it’s cooled a few degrees, fill those plates and enjoy! And they won’t even realize you served leftovers.
