Make Ahead Breakfast Sandwiches are easy to reheat for a quick breakfast solution

School is back in session, and the mornings are crazy. Making a hot, healthy, and hearty breakfast for everyone in the house isn’t even a thought. At least it’s not in my house! So Make Ahead Breakfast Sandwiches are a life-saver.

Our mornings are usually a giant rush. It doesn’t matter how much prep we did the night before. Backpacks are ready, lunches are made, clothes are set out. Somehow I am still using my most urgent and unflattering “mom voice” by the time we are scrambling to the car with seconds to spare. 

How is is actually possible that they forget every day the 8 steps necessary to be ready for school? It’s not that difficult. 

Here’s how I think it should go

  1. Wake up.
  2. Go to the potty. (Yes, I still use that word.)
  3. Brush your teeth.
  4. Put on clothes. This includes shoes.
  5. Brush your hair.
  6. Eat breakfast.
  7. Grab your backpack and lunch.
  8. Get into the car.

My expectations are really not that outlandish. 

Instead of going along with my simple and efficient plan, my kids think the morning should be different.

Here’s how they think it should go

  1. Wake up and sit on the bed for 15 minutes until Mom yells up the stairs, “Has anyone has gone to the potty yet??? I haven’t heard it flush.”
  2. Reluctantly slide out of the bed, and go to the potty. Roll your eyes that Mom still calls it a “potty.”
  3. Brush your teeth, and do whatever it is you do to annoy your sister.
  4. Argue with her about something until Mom yells up the stairs, “Stop arguing! Just don’t talk to each other. And don’t touch each other. Get ready for school.”
  5. Put on the clothes you picked out last night. Nope. Decide you don’t want to wear that. Change clothes. Change two more times. Pick out some shoes since the ones you picked out last night obviously won’t work anymore with your new outfit choice. Move a little faster when Mom yells, “We need to leave in fifteen minutes. What have you been doing for the past forty-five minutes?”
  6. Brush your teeth as fast as possible.
  7. Tell Mom you’re ready to go. Say “Oh yeah…” when Mom asks what you ate for breakfast.
  8. Grab something for breakfast, which is not a cookie because Mom said you can’t eat that for breakfast. Roll your eyes again, but don’t let Mom see.
  9. Pick up your backpack, and walk towards the door. 
  10. Turn around when Mom asks, “Did you get your lunch box?”
  11. Pick up your lunch box, and sit on the couch. 
  12. Stand up again when Mom asks/says/semi-yells, “What are you doing? Get in the car!” Try not to roll your eyes because Mom is right behind you, ushering you out the door.
  13. Get into the car, and arrive at school with 2 minutes to spare before the bell rings. Roll your eyes again (although you secretly love it) when Mom yells, “I LOVE YOU!!!” from the car as you slam the door.

Every. Single. Day. 

But I digress. 

Since I do not have time to make a nice breakfast every morning – I am trying to get myself ready for work while I’m corralling this rodeo – I have an easy solution for a homemade breakfast sandwich that can be microwaved and eaten on the go. (This is particularly helpful when it needs to be scarfed down in the car since we spent 20 minutes looking for the library book that is due back today yet my sweet child didn’t think about it when we packed her backpack last night…)

I like to make these on Sunday afternoon and freeze them. They heat up easily in just one minute so they can be squeezed into your morning routine with very little effort. 

Here are the simple steps. 

First, cook your bacon, ham, or sausage. Tip: if you make a big breakfast on Sunday morning, just make extra of the meat and use it for these sandwiches.

Now, cook your eggs in a small skillet like this one. I mix mine like scrambled eggs. Pour about a quarter cup of the mixture into a small skillet to form a thin layer, and then I let it cook a few minutes until it’s cooked through. I flip it in half like an omelet and then again in half to make a quarter fold.

After the eggs and meat are ready, slice each English muffin in half. Layer cheese, meat, and egg onto the muffin. Wrap it up in wax paper or parchment (just to keep the sandwich together), and put it in a container to freeze.

When you’re ready to eat one, pull it out of the freezer and wrap it in a paper towel. Microwave on high for about one minute. Enjoy!

  1. I used to make ahead sausage biscuits and got out of the habit. I’m going to have to get back into the habit. When I made them, I wrapped them in microwaveable plastic wrap and just popped it all in the microwave when I wanted one. No paper towel needed! Also, a little hack from my McDonalds days. . . Get a metal biscuit cutter and put it in your egg pan. When you cook the egg, pour your mixture into the cutter and let cook. You’ll have a perfectly round egg that fits nicely on your muffin, biscuit, etc.

  2. I love that your kids’ morning routine goes a lot like our kids’ morning routine. Lol. Breakfast sandwiches are always a good bet. I’m always looking for breakfast ideas too so this was a good find.
