Creamy Spaghetti Squash Skillet
Healthy doesn’t have to lack flavor, and this creamy spaghetti squash skillet recipe will prove that to your whole family. Smoked turkey sausage and tons of your favorite veggies in this one-pot meal will satisfy your tastebuds and keep your health goals on track.
I know I need more vegetables in my diet. I doubt I know anyone who can say they always get enough vegetables. But man, it’s hard to do!
So when I’m focused on eating well, I look for recipes that help me get in lots of veggies but brings in tons of flavor.
Let’s be real. If it doesn’t taste good, I don’t want to eat it.
So I picked a bunch of veggies I like, added some lean meat, made a creamy “sauce” with some parmesan and half & half, and I created a healthy dish that’s quick to make and easy to clean up.
No, it’s a nutritionist’s dream dish, but it’s yummy, filled with veggies, and satisfies my desires for hearty and savory food. I named it Creamy Spaghetti Squash Skillet because Creamy Spaghetti Squash with Smoked Turkey Sausage and Lots of Veggies is a bit much.
Ingredients you need
- Small spaghetti squash
- Head of broccoli
- Mushrooms
- Red bell pepper
- Smoked turkey sausage
- A little bit of butter or olive oil (or not – it’s up to you)
- Parmesan cheese
- Half & half
- Parsley for garnish if you’re feeling fancy
Be creative with your mix of veggies. Red onions and zucchini are great in this. You could also try asparagus, grape tomatoes, anything!
How to make Creamy Spaghetti Squash Skillet
First, you have to cook that squash. It’s so easy, and you can decide the method (bake in oven or slow cook) based on the time you have. Here’s how.
Now to the chopping. Grab a large cutting board, a good knife, and get to work. Chop all the veggies into bite sized pieces.
Then cut the sausage. Sometimes I cut round slices. Sometimes I cut them smaller. It’s all up to you.
Put a little olive oil or butter into a big skillet and toss in the sausage. Cook med-high for a few minutes, stirring / turning over the pieces a couple of times.
Toss in the chopped veggies, give it a good stir, and put a lid on it. Let those veggies soften over a medium heat for 8-10 minutes. Stir a few times so they’re all heating evenly.
By the way, I start with the sausage because I like to get a nice sear on it. It just needs to be heated so if you want to throw everything in together at once, put a lid on it, and let the sausage heat while the veggies cook down, go for it!
Once everything is heated, it’s time for the hot spaghetti squash, some half & half, and the parmesan. Mix everything well.
Let the whole thing heat a few more minutes, and then serve it up. Be proud of all the veggies you’re eating in this creamy spaghetti squash skillet recipe!
Creamy Spaghetti Squash Skillet
Notes
Use vegetables you like in this dish. Some suggestions: red onion, zucchini, grape tomatoes, or asparagus. Be creative!
Ingredients
- Small spaghetti squash, cooked
- 1 head broccoli
- 8 oz mushrooms
- 1 red bell pepper
- 1 pkg Hillshire Farm smoked turkey sausage
- 2 T extra virgin olive oil
- 1/2 C half & half
- 1/4 C grated parmesan
- Parsley, for garnish
Instructions
- Chop broccoli, mushrooms, and red bell pepper into bite size pieces.
- Slice smoked turkey sausage in 1/4 inch round pieces (or chop into smaller bites according to preference).
- Heat extra virgin olive oil in large saucepan over medium heat.
- Add smoked sausage and heat through for 5 minutes.
- Add chopped veggies, stir, and place lid on skillet.
- Heat until veggies are softened, about 8 minutes.
- Using a fork, pull the “spaghetti strands” from the squash, and add to the skillet. Mix veggies, squash, and sausage well.
- Add half & half and parmesan, stirring to melt the cheese and warm the half & half.
- Garnish with parsley, and serve warm.
